Get Yourself A Wife (Turkey Vegetable!) Soup

When Rita and I first started “dating” in 1999, she called me to cancel due to her having a cold. Knocking on her door that evening with a pot of this soup started to cement what would ultimately become a life-long commitment.

            Serves 6-8, Easily Doubles, and left-overs can be frozen!

INGREDIENTS: Store-brand canned vegetables are cheaper and are just fine.   * = Rinsed

1 Green Peas*                                                        1 Whole Kernel Yellow Sweet Corn*

1 French-Style Cut Green Beans*                 1 Green Lima Beans*

1 Pinto Beans*                                                      1 Sliced or Diced Potatoes*

1 Sliced Mushroom Pieces & Stems*         1 Diced Fire-Roasted Tomatoes

2 Mixed Vegetables*                                    1 Sliced Carrots* (Optional)

1 ROTEL Original Diced Tomatoes and Green Chilies (Optional, but... Good!)

2 Campbell's Condensed Cream of Chicken & Mushroom Soup  - OR -
            1 Campbell's Condensed Cream of Mushroom Soup  - AND -
            1 Campbell's Condensed Cream of Chicken Soup 

1 Tbsp Minced Garlic                                         Salt & Pepper to Taste

2-3 Qts Turkey/Chicken Broth (College Inn, or similar)

3-4 Lbs of Cooked Turkey Breast Meat,

NOTE: If your family particularly LIKES (or DISLIKES!) any of the above vegetables,
you can ADD (or DELETE) an extra can of that vegetable.

DIRECTIONS:

Step 1: Add to the pot:
-
Select the French-Style Cut Green Beans and after rinsing, chop coarsely.
- All the other canned vegetables (Rinse those with a *).
- Two cans of Campbell's Condensed Soup.
- ALL the remaining ingredients (Except the Turkey).

Step 2: Prepare the turkey breast:
- Use either a previously saved remnant or newly purchased whole turkey breast.
- Depending on your “meat preference” amount, use 3 – 4 pounds of cooked meat. If you are boiling the turkey meat for this soup reserve the turkey’s cooking water to add to pot. If you have no tasty broth to add, add the 2 to 3 quarts of store-bought chicken/turkey broth. (College Inn or similar) Broth.
- After the turkey meat cools, dice into cubes at spoon size (¼ to ½ Cubes) and add to pot.

Step 3: Add additional water as needed to make the soup nice and juicy. Then let the soup simmer for at least one hour. Check the Salt & Pepper to Taste.

Step 4: Serve steaming hot with crusty rolls, crackers, or by itself.

Need to Rinse Canned Vegetables?
For most canned vegetables/beans, the answer is a resounding yes!
Rinsing:
 1. Reduces Sodium: A quick rinse in a colander under cool water can wash away a significant
amount of the sodium from the canned liquid.
 2. Improves Flavor and Texture: Rinsing washes away the starchy, sometimes “tinny” tasting
liquid. Allows the true flavor of the vegetable or bean to shine through. This is especially true
for beans and chickpeas.
